We had our annual pig out party this past weekend. My son picked up the pig on wednesday, 225 lbs before killing and gutting it. We hung it in the cooler until Friday and then skinned it that evening.

Here's miss piggy getting her rub down.

We put it in the cooker at 9:00 pm

The plan was to take shifts tending to the cooker, but the boys stayed up all night drinking beer and sitting around the campfire. The hog turned out great, had about 50 guest and the party lasted into the wee hours of Sunday morning, needless to say Sunday was indeed a day of rest. I'm getting too old for this nonsense.
