    Crazy kitchen knife skills

    This is a knife made using the honyaki method of deferentially hardening the steel, much like the Samurai swords. The bladesmith who made is well known among Japanese blacksmiths as one of the very best. The chef using it possesses some mad skills with a blade and if you know anything about the subject you will see he employs a variety of cutting/slicing techniques.

    I bet the cost of that knife will put a hefty dent in ones wallet...

    Speaking from experience, having grown up working in a family owned restaurant and trained on how to do stuff like that, technique is half of it, a really sharp knife to be able to pull it off is the other half.

    Here's a similar blade from a different smith. Notice the hamon line looks like Mt. Fuji with the moon over it. Full moon on one side ... quarter moon on the other. Yeah, it's way out of my pay grade.

    Although I don't have any of those high dollar Japanese knives, I am well aware of them. Thanks for sharing those clips.

    I never eat out and cook every day and have a modest collection of razors with handles that I use daily; MAC, Hiromoto, Shun & others, so I appreciate a good sharp knife.
